  "Bone Marrow Flambadou". Flambadou is a cast iron cone that you get extremely hot in the coals of the fire, and drop fat into so it ignites and quickly melts the fat onto whatever you are cooking. We drop bone marrow in ours to gently cook the oyster and add that rich beef fat. Served with a cider-shallot vinaigrette.
